Measuring tahini accurately

Stir tahini thoroughly first, because the oil separates and floats to the top of the jar as it sits. Grease the cup so the thick paste releases instead of clinging, or skip the mess entirely by weighing 256g per cup straight into the bowl for dressings and hummus.

Hulled, unhulled and black tahini: what changes (and what doesn't)

Recipes rarely say which tahini they mean, and for the math it doesn't matter: hulled and unhulled tahini measure the same, so the chart above applies to both. 1/2 cup of hulled tahini is about 128 g, 1/4 cup about 64 g, 1/3 cup about 85.3 g. USDA's two entries hint at a small gap (15 g per tablespoon for the common roasted hulled type, 14 g for unroasted whole-seed), but hulled and unhulled brands print identical serving weights — the difference is smaller than ordinary measuring error. Using a 250 mL metric cup rather than the US cup? Figure about 271 g per level cup.

What does change is the character. Unhulled (whole-seed) tahini is darker, coarser and distinctly bitter because the hulls come along for the grind — and those hulls carry several times the calcium, iron and fiber of hulled tahini. Hulled is the mild, pourable style most hummus and cookie recipes assume. On the weight itself, published values honestly spread from about 224 to 256 g per US cup: USDA works out to 240 g, most brand labels round to 240 g (30 g per 2 tbsp), and King Arthur's chart gives 256 g — the value we use. A settled jar splits into a light sesame-oil layer (about 0.92 g/mL) over dense solids, so an unstirred scoop can land either side of any published average. Stir until homogeneous, or better, weigh.

Two look-alikes to watch. Chinese sesame paste (zhi ma jiang) is not tahini — it's ground from deeply roasted unhulled seeds, so it's darker, thicker and far more intense; tahini plus a splash of toasted sesame oil approximates it, but the swap fails in reverse. Black tahini is true tahini made from black sesame — earthier tasting, same weight per cup. Making your own? A cup of sesame seeds (about 142 g) blends down to roughly 1/2 cup of tahini, a bit more once you add oil to loosen it.
