Frequently asked questions
What is 350°F in Celsius?
350°F is 177°C, which recipes almost always round to 180°C — it is also gas mark 4, the most common baking temperature. To convert any temperature yourself: subtract 32, then multiply by 5/9.
How do I adjust the temperature for a fan (convection) oven?
Lower the temperature by about 20°C (25°F) from what a conventional recipe states, because the fan circulates heat and cooks faster. Alternatively keep the temperature and shorten the time by 10–15%. Our chart lists conventional temperatures.
What temperature is gas mark 4 (or gas mark 6)?
Gas mark 4 is 350°F / 180°C and gas mark 6 is 400°F / 200°C. Each gas mark step is 25°F (about 14°C), so gas mark 1 is 275°F and gas mark 8 is 450°F.
What do 'slow', 'moderate' and 'hot' oven mean?
Old recipes describe the oven in words: a slow oven is about 300–325°F (150–170°C), a moderate oven is 350–375°F (180–190°C), and a hot oven is 400–450°F (200–230°C). A very hot oven is 475°F+ (245°C+).
Do I change the oven temperature when I change pan size?
No — keep the temperature the same and adjust the time instead. A wider, shallower pan bakes faster and a deeper pan slower; use the pan size converter to match pans, then start checking for doneness a few minutes early.
