Two rows above are worth a second look. Brown rice weighs the same as white at the same grain length (185 g per cup long-grain, 190 g medium) — the bran adds cooking time and water, not weight — so recipes swap by volume or weight without recalculating. Instant rice is the outlier at about 95 g per cup, roughly half of regular rice: it is pre-cooked and dried, so its grains are puffed and airy.
